Yes, the EVGA x58 SLI3 will support AMD GPUs as well as Crossfire.

EDIT: I believe the Radeon 6800 series graphics cards will be released this week to replace the 5700 series cards, so you might want to wait until they are out to buy your graphics card, since prices will, in all likelihood, drop for the 5000 series. AMD are also using a new naming scheme, rather than have a 6700 replace the 5700, the 6800s will replace the 5700s, and the 6900s will replace the 5800s. The 6990 will replace the 5970.
